Soju smells of clean, neutral alcohol. It is mild and slightly sweet, close to vodka rather than to a grain spirit, and it reads like a diluted sake with the fruit taken out.
Scent Profile
Boozy is nearly all of the note. The one comparative source calls it a neutral but strong alcoholic aroma, similar to vodka, and it is scored level with the published vodka note for that reason. Everything else is faint and stays under. Sweet_vanillic is the mild sweetness two sources mention, sugar rather than vanilla. Clean_musk is the very clean, almost neutral quality that separates soju from a grain spirit. A small nutty reading covers the rice and barley base, a small fruity one covers the diluted-sake likeness, and a trace of sour sits under both.

Origin
A Korean spirit distilled from rice, wheat, barley or sweet potato. Alcohol content runs from about 12.5% to 53%, but since 2007 the low-alcohol type below 20% has been the common one. Production method splits the smell in two. Distilled soju is complex and rich. Diluted soju, the mass-market bottle, is described by the same study as an even quality with a simple taste and aroma.
Usage in Perfumery
A gourmand and beverage note. It gives a cold, clean alcoholic lift without the fruit of sake or the sweetness of a liqueur.
