Tokaji is a Hungarian sweet wine made from grapes shrivelled by noble rot. It smells of apricot and honey first, cut by orange peel and a sharp freshness that stops the sweetness going heavy. Under that sits a warm ginger and saffron spice the rot puts there, and a nutty, waxy layer that arrives with age.

Scent Profile

Fruity leads, and apricot is the most repeated word across both sources. Best of Wines opens with 'aromas of apricot, orange peel, honey, ginger and dried fruit' and Wine Folly's first flavour tag is Apricot. It is ripe-to-dried apricot, not generic stone fruit. Honeyed is second and both sources name honey outright, with Best of Wines adding 'a more complex, honeyed texture with age'. Boozy carries the widest spread in this vector and is the least supported value in it. Neither source uses the word alcohol or fermented. The number rests on the material being a wine and on the published wine notes here sitting at boozy. It is set below them because both sources treat the fruit as the subject. Citrus is the orange peel and the tangerine flavour tag, and it is the 'bright, almost piercing freshness' Best of Wines names. Warm_spice is saffron, which Wine Folly ties to the noble rot itself, making it the thing that separates Tokaji from an un-botrytised sweet wine. Fresh_spice is the ginger both sources list. Nutty is marzipan in Wine Folly's tags and the 'honeyed, nutty and waxy layers' of aged Furmint. The stronger nutty oxidation compared to Fino sherry belongs to the dry Szamorodni style and is not pushed into the sweet profile. Floral rests on a single claim about a single blending grape, that Hárslevelű 'imparts a lively character and intense floral notes'. Sweet_vanillic is concentrated grape sugar, not vanilla. Sour carries the green-apple tartness of young Furmint and the piercing acidity both sources treat as the wine's structure. Below the line, green is that green apple, and tropical, aldehydic and mineral are held small with wide spreads because no source names them and none rules them out.

Origin

Tokaji comes from the Tokaj region of north-east Hungary, mostly from the Furmint grape with Hárslevelű blended in. Grapes left on the vine are infected by Botrytis cinerea, the noble rot, which dries them and concentrates their sugar. Wine Folly attributes the ginger and saffron aromas to the rot itself rather than to the grape. Young Furmint is green apple and citrus. The aged Aszú style has moved past that into honeyed, nutty and waxy layers. There is no essential oil or extract of a wine, so the perfumery note is an accord built to suggest it.

Usage in Perfumery

A heart note in gourmand and boozy compositions. It is attested 3 times on Fragrantica and once on Parfumo across 1 brand, so it is a rare note rather than a workhorse. It offers what the other wine notes here do not: apricot and honey over the fermented base, plus a spice lift. It pairs with stone fruit, honey, saffron, tobacco and amber.
