About

Evaporated milk is unsweetened milk reduced by heat and sealed in a tin. In perfumery it reads as plain dairy creaminess with a cold metallic edge from the can. It is the unsweetened half of the tinned-milk pair. Condensed milk is the other half, and that one carries added sugar.

Scent Profile

Lactonic leads and is the whole body of the note: reduced cows' milk, thicker than fresh milk but with none of condensed milk's sugar. Mineral is the facet that earns this note its own row. Both sources reach for the same word, one calling a fragrance built on it 'canned, metallic evaporated milk' and the other asking for 'a slight metallic taste - condensed milk is almost always found in cans'. Clean musk carries the dairy and follows the published milk and condensed-milk notes, which sit at 0.35 and 0.28. It is held under both because no source here names it. Below the line sit sweet_vanillic, deliberately a third of condensed milk's 0.68 because the reviewer's whole point is that this material is the unsweetened one, sour for the 'fleeting damp smell of a dish kept in the fridge a tad too long', and small nutty and creamy_woody traces for the cooked character heat sterilisation leaves.

Origin

The material is a food, not an extract. About 60% of the water is removed from cows' milk by vacuum evaporation, then the tin is sealed and heat-sterilised. Perfumery does not distil it. The note is a compounded accord of dairy lactones with a metallic accent, built to recall the tin rather than the udder.

Usage in Perfumery

Used where a milk accord needs to read as processed and packaged rather than fresh. Hilde Soliani's Crema di Latte is the placement one reviewer names outright. It sits with vanilla, sandalwood and clean musks, and it gives a gourmand base a cold, slightly uneasy edge that fresh milk does not.
