Pretzel is the smell of a soft baked pretzel: warm wheat dough, a lye-browned crust and coarse salt. A sensory study at TU Munich analysed freshly baked soft pretzels and found the strongest notes were roasty and popcorn-like, then fatty, then buttery, caramel-like and sweaty. Perfumery versions of the note usually add vanilla and brown sugar on top, which the real baked pretzel does not produce at that strength.

Scent Profile

Roasty baked crust leads, and it reads as nutty rather than woody, the popcorn-and-crust register the Munich panel put first. Under it sits a lactonic fatty-buttery body, named as dominant by the analytical source and as 'rich creamy butter' by the fragrance-oil trade. A sweet_vanillic caramel layer follows: the panel found caramel-like notes in the real pretzel, and both commercial fragrance oils push it further with brown sugar and vanilla. Mineral carries the coarse salt coating that two sources name and one puts in the product title; salt has almost no odour of its own, so this facet is the weakest claim here and its spread is the widest in the vector. A tobacco_hay dryness carries the raw wheat flour behind the crust. Below the line, sulphurous and animalic hold the cheesy and sweaty descriptors the panel reported, smoky holds the darker lye-burnt edge of the crust, and coffee_cacao, earthy, powdery, honeyed, warm_spice, creamy_woody, sour and boozy hold the malty, mushroom-like, cooked-potato and yeasted-dough traces.

Origin

There is no extract of a pretzel. The note is a built accord. Suppliers make it from a baked-dough or wheat accord, butter lactones, maltol or ethyl maltol for the caramel-crust register, and a salt or mineral effect for the coating. Wholesale Supplies Plus publishes its build as whole wheat accord, soy milk and crisp crust over fresh baked pretzel accord and creamy butter, on maple bark, brown sugar and vanilla extract. Auntie Anne's 2024 fragrance 'Knead' used buttery dough with salt and a hint of vanilla. No Givaudan, IFF, Firmenich or Symrise olfactive sheet for a pretzel accord was found.

Usage in Perfumery

A gourmand base note in bakery compositions, used to put a savoury-salted bread smell where a sweeter pastry note would be cloying. It sits with butter, caramel, salt, malt and vanilla. Four Fragrantica perfumes carry it and no Parfumo placement was found, so it is a niche and mostly novelty term rather than a working perfumery material.
