Souffle is a gourmand note built on a warm, sweet baked-egg accord. It reads as a light dessert rather than a dense one: sugared, milky and airy, with a faint browned-top edge and a whisper of cooked egg underneath. The fruit or chocolate flavouring of a real souffle is not fixed, so in perfumery the term is used for the sweet, puffed baked base itself and whatever is layered over it.

Origin

A souffle is a baked dish, not an extracted material. A flavoured base is folded into whipped egg whites and baked, and the whites give the lift. Wikipedia records that the base carries the flavour and lists herbs, cheese and vegetables for savoury versions; the perfumery use is the dessert version, so the base is a sweetened milk-and-egg custard. There is no souffle essential oil or absolute. In fragrance the note is a reconstruction, made from vanillic, lactonic and powdery sweet materials.

Usage in Perfumery

Used as a base accord in gourmand compositions, under fruit or chocolate. It sits close to custard, cake and meringue and does the same job: it gives a sweet composition a soft, milky, baked body instead of a flat sugar note. Only 3 Fragrantica perfumes use the term, so it is a rare vocabulary item rather than a standard building block.
