Sparkling wine is a constructed accord, not an extract. Aldehydes carry the fizz, citrus and green apple sit on top, and a toasty fermented base underneath says wine rather than juice.

Scent Profile

Aldehydic leads and both sources put it there: Cap Perfume describes 'bright, volatile top notes dominated by aldehydes and citrus compounds', and Bon Parfumeur names aldehydes as the molecules that make the effervescence. Fruity covers the crisp green apple Cap Perfume names and the fruity side of the wine lees. Citrus is 'bright citrus notes such as lemon and bergamot'. Boozy is what makes this wine and not fizzy juice, carried by the wine lees and the fermentation character both sources describe. Green is the apple read specifically as green apple peel rather than ripe flesh. Nutty is the 'subtle toasty nuances reminiscent of the sparkling wine's fermentation process', the brioche side of bottle-fermented wine. Under those sit a mineral bead, a tart sour edge, the buttery and woody facets Bon Parfumeur gives wine lees, and the powdery or musky softeners it lists as optional rather than defining.

Origin

No house sells a captive called sparkling wine or champagne. Bon Parfumeur states plainly that 'perfumers use a complex blend of synthetic and natural ingredients to create accords that mimic the aromas of champagne', listing aldehydes 'used to recreate a sensation of effervescence', fruity notes, flowers and powdery or musky notes. The one natural it singles out is wine lees essence, 'obtained from the residues of winemaking', which 'releases a very specific fruity, buttery, woody, and sparkling scent'. Nine Fragrantica entries and three Parfumo brands list the note.

Usage in Perfumery

A top-to-heart accord for celebratory openings. It does the same job as the published Prosecco note but toastier and less fruit-forward, which is the contrast the Prosecco note itself draws. Pairs with citrus, white flowers and soft musks.
