Strawberry Aldehyde
Note Profile
About
Jammy, waxy cooked strawberry
Scent Profile
Strawberry Aldehyde smells of strawberry preserve rather than fresh fruit: sweet, jammy and cooked. It is round and syrupy, less sharp than real strawberry. A warm, waxy-fruity body sits under the jam, and it grows stronger when the material is used heavily. A slight floral note and a faint honey sweetness show at the edges.

Origin
Strawberry Aldehyde is the trade name for ethyl methylphenylglycidate (CAS 77-83-8), also sold as Aldehyde C-16. It is a synthetic glycidate ester. It is not an aldehyde and it is not found in strawberries.
Usage in Perfumery
Perfumers use it as a heart modifier in fruity and gourmand compositions. It gives a strawberry preserve effect rather than fresh fruit. In some contexts it reads as other cooked fruits, such as raspberry or red currant jam.
