Cucumber has a crisp, watery green scent with subtle vegetal and slightly sweet undertones. Its aroma is reminiscent of freshly cut cucumber flesh, offering a cooling and airy freshness that remains light and transparent as it evolves. The note can also impart a faintly dewy, almost ozonic quality to compositions.
Cucumber notes in perfumery are typically recreated using aroma chemicals such as cis-3-hexenol and other green aldehydes, as natural extraction from cucumber fruit is not practical or sufficiently aromatic. These synthetic molecules capture the characteristic fresh and aqueous facets of the real vegetable.
