Raspberry macaron is a gourmand note built from two halves that both have to be present: warm raspberry jam and the almond-flour shell of a French macaron. It is not raspberry with sugar added, and it is not the published macaron note with a fruit top. The jam is cooked, so it reads rounder and less tart than fresh raspberry.

Scent Profile

Fruity leads and is jam rather than fresh fruit: cooked, warm and dense. Nutty is equally weighted because both sources put toasted almond flour or almond cream at the centre of the shell, and it is the facet that stops this reading as a berry note. Sweet_vanillic sits alongside them, carrying caramelised sugar, Madagascar vanilla and white sugar, all named by both sources. Powdery holds the ground-almond and icing-sugar texture of a macaron shell, which the published macaron note scores at 0.72 and which is diluted here by the fruit. Lactonic carries the buttercream filling, the heavy cream and unsalted butter Sucre Abeille names. Sour is the tart edge that survives cooking, well below fresh raspberry. Below the naming line, floral holds the rose water that appears in one source only, creamy_woody the butterfat body and green a small bramble edge from the raspberry.

Origin

A built accord, like every macaron note. There is no extract of a pastry. Sucre Abeille publishes its build as warm raspberry jam, toasted almond flour, caramelised sugar, Madagascar vanilla, heavy cream, unsalted butter and a splash of rose water, and says the fragrance was designed around a raspberry buttercream sitting on the shell. Wellington Fragrance builds a related raspberry-peach version from raspberry, peach, grape and apricot over vanilla macaron, white sugar and almond cream. No manufacturer olfactive sheet was found.

Usage in Perfumery

A heart-to-base gourmand note in sweet fruity compositions and in patisserie-themed lines. It pairs with vanilla, cream, other berries and soft musks. Two Fragrantica perfumes and two Parfumo placements across two brands carry it, so it is thinly used but real, and both attesting sources are commercial recreations rather than descriptions of the pastry itself.
