About
Maraschino cherry is the preserved fruit, not the fresh one. It is intensely sweet and syrupy, candied rather than juicy, with a bitter-almond edge and a powdery vanilla softness. A slight boozy lift sits behind it. Both sources define it against natural cherry on the same axis: this one is not tart.

Candied fruit and syrup lead together: fruity and sweet vanillic at almost equal weight, dense rather than juicy. A sharp nutty bitter-almond facet cuts the sugar and stops it going flat. Powdery vanilla from heliotropin softens the edges, and a boozy lift sits behind the sweetness. Sour stays low, and that is the stated difference from fresh cherry.

Origin
A synthetic accord, not an extract. Premiere Peau pins the effect to a ratio inside the general cherry accord: benzaldehyde to para-tolualdehyde at about 4:1 or 5:1 gives the candied, syrupy maraschino character instead of plain bitter almond. Heliotropin adds the creamy cherry-pit warmth. The referent is fruit preserved in sugar and brine.
Usage in Perfumery
A gourmand note. Perfumers use it for cocktail and dessert accords, over vanilla, tonka, cacao and boozy bases. It reads as deliberate artifice, so it suits fragrances that want the sundae or the bar rather than the orchard.
