About

Chocolate in perfumery is a warm, roasted, faintly bitter gourmand note built on cocoa's dusty, powdery character rather than on confectionery sweetness. It carries nutty and faintly fruity edges from the fermented bean, and reads darker and drier than the word suggests - closer to unsweetened cocoa mass than to a filled bar.

Scent Profile

Chocolate presents a roasted, cocoa-dusty aroma with bitter edges, supported by nutty warmth and a faint fermented fruitiness. It is drier and less sweet than its name implies.

What this is made of

Cacao absolute

A natural extract

CAS 8002-31-1

The chocolate note is delivered by cacao absolute. Chocolate itself is a confection, not a perfumery material.

How the layers join

Origin

Cocoa absolute is extracted from the roasted, fermented beans of Theobroma cacao, native to the Amazon basin and now grown across West Africa and Indonesia. Unlike most gourmand notes a genuine material exists: the absolute is dark, viscous and expensive, and perfumers also reach for reconstructions built on pyrazines and vanillin.

Usage in Perfumery

Perfumers use chocolate as a base and heart accent in gourmand compositions, where its bitter edge keeps sweetness from cloying. It pairs with vanilla, tonka, coffee, patchouli and orange, and a little goes far - cocoa absolute is tenacious and dominates easily.
